Homemade Dinner Rolls for a Large Family

I absolutely love homemade dinner rolls. Do you? When I entertain, whether for a large group or my family, I love to watch everyone enjoy the aroma of freshly baked homemade bread when they enter the home. I also enjoy the expression I see when they take the first bite of that warm roll with butter or apple butter on it. It’s a nice enhancement to the delicious meal that is before them.

There is just something about a homemade roll for dinner that makes the meal that much more enjoyable.

I have a great family recipe for you that you can use to feed your large family. This recipe will yield more than four dozen.

4 Tbps shortening

¾ C granulated sugar

1 ¼ tsp salt

2 eggs

2 C warm milk

1 C water

3 Pkgs of dry yeast (1 strip or 1 cake)

7 C flour

Mixture 1: Cream shortening, sugar, salt and eggs.

Mixture 2: In separate container, add yeast to warm water, stir and let set.

Mixture 3: Heat the milk for one to two minutes in microwave.

Add the mixture 1, and mixture 2 to mixture 3. Be sure to mix well. Add flour and knead the dough well.

Put the dough in a greased bowl and let rise double in size. Roll out into rolls, let rise and bake at 350 degrees for about 8-10 minutes.


Warm Water: Be sure your water is warm to the touch, a few degrees about room temperature and warm enough to dissolve the yeast. Be careful that the water is not hot and does not kill the active yeast, otherwise, your dough will not rise.

Warm Milk: Same as the water. Be sure that it is warm, not boiling hot, as it could kill the rising action of the yeast.

Eggs: It is often helpful to beat up the eggs slightly before adding them to the mixture.

Yeast: be sure that your yeast is fresh and not outdated. Outdated yeast will lose its ability to rise.

Types of Rolls: Make pull buns by placing the dough balls in a 9 x 13 greased pan about one inch apart. They will rise while baking and press together, giving them the opportunity to be “pull buns”.

Separate dinner rolls can be made by placing them in muffin pans. If you want a nice large dinner roll, use the regular cupcake/muffin pan. If you prefer a small dinner roll, use the smaller tart pans.

Dinner Roll Buns: You can make your home burger buns, by placing these rolls on a greased cookie sheet about 2 inches apart. Shape them a little round and flatter. They will puff up and you can press them down lightly about ½ way through the rising process and again in the baking process.
