Job description: We are offering an exciting opportunity for the right candidate to assist the Group Executive Chef in the smooth running of the culinary experience at Melbourne Showgrounds and the Melbourne Royal Show in the role of Chef de Cuisine. Please note this is a 6 month fixed term contract.About usIn 2018, the Moonee Valley Racing Club launched Dean & McPherson and partnered with PGA Tour in 2019 to deliver the world-renowned Presidents’ Cup at Royal Melbourne Golf Club. This vision is one shared by Dean & McPherson and it is imperative that the successful applicant takes responsibility for leading the drive for excellence.About the roleAs an integral role in the partnership between Dean & McPherson and Melbourne Royal and reporting to the Group Executive Chef, the Chef De Cuisine is responsible for managing all Dean & McPherson culinary and kitchen operations at the Melbourne Showgrounds including the signature Victoria Pavilion in conjunction with all other events across the Showgrounds precinct including the Royal Melbourne Show, Retail / Street Food and Green Room style events. The role must develop, innovate and deliver excellence that drives Dean & McPherson to be a globally recognised hospitality provider.This will be driven by ensuring that all working methods are reviewed and best practice is achieved whilst delivering an excellent culinary offering and presentation that meets the needs and expectations of Melbourne Royal, Dean & McPherson and our clients.To effectively perform in the role, the successful candidate must possess the following skills, experience and qualifications:

  • Trade qualification in Commercial Cookery.
  • 5+ years’ experience working as a Senior Chef with a high focus on quality, profitability & presentation.
  • Experience in large venues or multi-site operations with high volume catering from premium retail experiences to fine dining.
  • An exceptional understanding of what it takes to run a profitable business as well as exposure to commercial negotiations and a proven track record in leading high performing teams.
  • The ability to deliver consistent, high quality food whilst maintaining food costs in a fast-paced environment.
  • Exceptional time management, methodical planning, organisation and a great eye for detail.
  • A customer first focus and a desire to exceed guest and client expectations by delivering consistent, high-quality experiences.
  • A passion for leading from the front and being hands-on in leadership style with the ability to confidently lead, develop and motivate our talent as a cohesive brigade.
  • A modern approach and flair for menu planning and design with the ability to anticipate and be ahead of trends.
  • A strong understanding of workforce planning.
  • Strong stakeholder management skills.
  • Food Safety supervisor qualifications and Food Allergens Certificates and have the ability to establish and ensure compliance with Food Safety program and WHS standards

You must be prepared to work outside the spread of normal hours with availability to work across the week, weekends and public holidays when required.
